Maintaining Weber Grill Parts

Cleaning Charcoal Grills

Charcoal Weber grills are easier to clean and maintain than gas Weber grills. When cleaning the Weber grill parts of a charcoal grill, you need a charcoal griller's toolbox. This toolbox contains brass wire grill brush, soap-embedded fine steel wool pads (0 to 100 grades), mild dish soap and a sponge or dishcloth. Immediately after coals die out, dried particles on the cooking grate should be loosened with a brass grill brush. To clean thoroughly these Weber grill parts, you apply slight pressure on the part with a wet, soapy and fine steel wool pad. You then rinse them thoroughly and allow them to dry. To prevent airflow problems, you should remove cold ashes from the bottom of the kettle. This prevents premature rusting of the One-Touch Cleaning System as ashes also absorb moisture.

As needed, clean the bowl and the lid with warm, soapy water and a sponge or dishcloth. For baked-on grease, you can remove them by simply brushing it off using a bras wire grill brush. For gas grills, the additional parts that should you should clean include the flavorizer bars, warming racks and control panel, bottom trays, endcaps and cookbox. You can clean flavorizer bars by heating the grill enough to remove the accumulated debris. The bars may be occasionally brushed or scraped using nylon, plastic or a Teflon putty knife. Warming racks and a control panel may be cleaned by the use of fine steel wool pad with soap. You could remove grease spots and stains with light wiping using fine steel wool pad so as not to scratch the porcelain. You should never remove the Weber grill parts, such as the bottom tray, while hot. You can use a one-inch putty knife or any straight or flat object to scrape carefully the inside of the bottom tray. For deep cleaning, you can use warm soapy water and a soapy fine steel wool pad, being careful not to scratch the porcelain finish. Never place a foil in the bottom tray, since grease may accumulate in the foil's creases and cause grease fire.

You should properly maintain your Weber grill parts to achieve the most out of their use. Just remember that well-maintained parts last longer and perform as good as new replacement parts.

o When making lean hamburgers (such as when using fresh ground round) mix in one egg for each pound of meat in order to prevent crumbling.
o The leaner the hamburger patties, the drier the hamburgers will be, and the more likely they will crumble while grilling.
o When forming the hamburger patties, be sure to press the middle thin or make a thumb-sized hole to keep uniform thickness while cooking.
o Make hamburger patties about 1/2" larger around than the hamburger buns you will be using as the hamburger patties will shrink.
o You may shape the hamburger patties by either using your hands or using a hamburger patty mold press.
o Pre-heat the grill on high temperature. After pre-heating the grill, clean and oil the grates.
o Brushing a little canola oil on the hamburger patty as well as on the grill will help keep the hamburger from sticking to the grill.
o Closing the lid and vents while cooking will reduce moisture-robbing flair-ups.
o Another way to avoid flair-ups is to place the hamburger patties in an aluminum pie tin. Place the hamburger patties so they do not overlap each other. Still turn the hamburger patties over about half way through cooking. Cook directly on the grill after they are 90% done.
o Turning the hamburger patties one quarter of a turn clockwise or counter-clockwise will create crisscross grill marks.
o Do not press the burgers on the grill as this will cause moisture to escape the burger.
o Flip the burger over only once, half way through cooking time, in order to preserve moisture.
o Never cut a hamburger on the grill so that the moisture stays inside the meat.
o When the juices start coming out of the top of the burger, then it is about medium.
o When the juices pool clear (not red) on top of the burger, then it is about medium-well.
o Use an instant read meat thermometer to determine if the hamburgers are done. 160 degrees Fahrenheit is medium. 170 degrees Fahrenheit is well done.
o Never place cooked meat back onto the same plate as was used for raw meat.
o Brush melted butter onto the hamburger buns and briefly toast them on the grill.

Grill Recipes For Steak and Asian Hot-Que Grill Sauce For Chicken

1. Anchovy-Grilled Salmon Steaks

Grill Recipes For Steak and Asian Hot-Que Grill Sauce For Chicken

Yield: 4 Servings

Ingredients:

- 4 salmon steaks
- 1 parsley sprigs

Lemon wedges anchovy butter

- 6 anchovy fillets
- 2 T milk
- 6 T butter
- 1 dr tabasco sauce
- 1 pepper

Directions:

- Pre-heat the grill to high heat.
- Oil the grill rack and place each steak to ensure an even heat.
- Place a small knob of Anchovy Butter (divide a quarter of the mixture in four) on each steak.
- Grill for 4 minutes.

- Turn the steaks with a fish slice and place another quarter of the butter among the steaks.
- Grill on the second side 4 minutes.
- Reduce the heat and allow to cook for a further 3 minutes, less if the steaks are thin.
- Serve with a neatly arranged pat of anchovy butter on top of each steak. Garnish with parsley sprigs and lemon wedges.
- Anchovy Butter: Soak all the anchovy fillets in milk. Mash in a bowl with a wooden spoon until creamy.
- Cream all ingredients together and chill.

Serves 4.

2. Anticuchos Picantes

Yield: 16 Servings

Ingredients:

= Beef Heart =

Marinade

- 8 garlic cloves, ressed
- 2 chiles, rocoto, stemmed, seeded, minced
- 2 T cumin, ground
- 1/2 T oregano, dried
- 1 salt, to taste
- 1 pepper, black, to taste
- 2 c vinegar, wine, red

= Sauce =

- 1/3 c chiles, dried, aji, crushed
- 1 T oil, vegetable
- 1 salt, to taste

Heat Scale Hot

Directions:

- Clean the beef heart thoroughly, removing all nerves and fat.
- Cut into 1" cubes, place in non-reactive bowl, refrigerate and set aside.
- Combine garlic, chiles, cumin, oregan, salt and pepper and 1 1/2 cups vinegar.
- Pour over meat.
- Add more vinegar, if necessary, to cover meat completely. Marinate, refrigerated, 12-24 hours.
- About 1 hour before grilling, remove meat from marinade and thread on skewers.
- Reserve marinade.
- Soak the crushed chile in 1/3 cup warm water for 30 minutes.
- In processor, combine chiles and water with oil and salt.
- Add enough reserved marinade (3/4 cup) to make thick sauce, puree.
- Brush skewered meat with sauce and grill over hot coals or under a broiler, turning and basting to cook quickly on all sides.
- Best cooked medium well, 4-6 minutes on the grill.

Serve with remaining sauce for dipping.

3. Asian Hot-Que Grill Sauce For Chicken

Yield: 1 Servings

Ingredients:

- 1 stephen ceideburg
- 2 T brown sugar
- 2 T red wine vinegar
- 1 c ketchup
- 1/2 to 1 teaspoon chinese hot mustard
- 1 lg garlic clove, minced
- 1 T soy sauce
- 1 to 3 teaspoons asian chile paste with garlic

Directions:

- Combine all ingredients except chile paste in a small saucepan.
- Bring to a boil, then turn off heat.
- Stir in chile paste. Makes 1 1/4 cups.

To use: Brush on chicken, beef or pork while grilling.

Rotisserie Grilling Recipes - Grill, Baby, Grill

When one thinks of rotisserie cooking, you usually envision succulent meats like juicy Cornish hens, mouthwatering baby back ribs, utterly tender pork chops and... I could go on and on, but my mouth is salivating.

However, you can use the Ronco Rotisserie to grill anything including fruits and vegetables. Maybe they aren't as exciting to your taste buds or imagination, but grilling is a great way to add a little something to your side dishes instead of the typical sliced fruit or steamed veggies.

A rotisserie grilling recipe you could try is grilling fruit using the Ronco Rotisserie kabob rods. Just cut up your favorite fruit into small chunks; strawberries, pineapple, apples, oranges and etc. Thread them onto the kabob rods and brush each fruit loaded kabob with a sugary butter mix. George Foreman G5 Grill

Since the first creation of the George Foreman grills we have witness many advances and changes in designs always in an effort to make these grills better and more reliable for the users. Each grill had specific features that placed it in a class of its own. Each had merit that enabled it to stand on its own in any sort of competition.

With the great amount of use that most people place on their George Foreman grills they eventually wear out and must be replaced. Several features that make this grill particularly attractive is the fact that it has removable grill plates and can readily cook various types of foods such as pancakes and waffles.

The G5 grill is slightly larger then most of the Foreman series sitting at approximately 8 inches by 10 inches and with the handles you can extend the size several additional inches. It comes in red and black only so don't expect to see an abundance of designer colors to spice up your kitchen area.

As we all know the original George Foreman grills were designed strictly for grilling meats and an occasional vegetable or two. The G5 however has 5 different heating plates. These plates are the grilling plate, baking plate, steak plate, and several waffle plates. The plates all have black plastic release handles on both sides which are merely depressed and hook carefully into the grill prior to turning it on. To ensure that the plates are placed on the grill properly each of them are stamped on the underside with "upper" or "lower" annotations. This prevents placing the wrong plate on the wrong location.

When you prepare to cook your meal make certain that you install the plates that you will require before you turn on the grill as the plates will become extremely hot and will not be able to be changed again until the unit is shut off and cools down. There is a lock Lever at the right hand bottom which must be set in the proper position. The lever makes the bottom surface level in order to cook items such as pancakes. In the other position it will tilt the grill slightly to allow grease to flow down and away from your grilled food. The grease is caught in the enclosed drip tray that is placed beneath the unit to prevent grease from getting onto your counter top.

To use it is very simple. First make sure it is connected to an electrical source. Close the lid firmly and set the large dial at the front of the unit on the "L" position for low, the "M" position for medium or the "H" position for high. Instantly you will see the red power light as well as the green indicator light becomes illuminated. A sauce you can put on just about anything!

2 cups ketchup
3/4 cup powdered sugar
1 T Worcestershire sauce
1/4 t Tabasco sauce
6 T molasses
1/4 t garlic salt

Mix all the recipe ingredients in a medium saucepan. Gradually bring to a boil, then remove and serve warm or chilled.

This sauce recipe can go on just about any meat or poultry and is great to have around at all times. Feel free to add your own touch to it! You might want to add a little honey or put in a little of your favorite hot sauce or liquid smoke!

How to Grill Peppers

Grilled peppers make wonderful additions to all sorts of dishes. Guess what, it is easy to grill peppers. You can grill all sorts of peppers. Some of my personal favorites are red bell peppers, pablano peppers, jalapeño peppers, to name just a few. You can grill them on your stovetop preferably gas, in your oven by broiling them, or on a grill. If you use coals consider grilling up a few peppers after you finish grilling the steaks. After grilling your peppers you can make many different dishes with these flavorful peppers.

Start by rinsing off the peppers. Next get your grill hot. If your using a gas grill medium is a good heat. Place your peppers on the grill, and let them char and let the skin turn black. While you want the skin to turn black, you don't want the meat of the pepper to burn. Let the skin char on all sides. When you are done place the grilled peppers into a paper bag, close the bag, and let the peppers cool. It's a good idea, to put the bag either in your sink or on the ground, they may leak out juices.

Now if your using hot peppers you may want to use gloves. If you do not want to use gloves be sure not to put your fingers anywhere near your face. Strip the skins off of the peppers, cut open the peppers and take out the seeds. If any skin is hard to remove you may want to use your knife. Do not rinse your peppers, as you will wash away the taste. These store well in the refrigerator for up to three days.

How to Grill Peppers

Wonder what to do with your peppers? You can add them to omelets, serve them up as a salad, serve them in a salad, and so much more. To make a simple salad with them you can simply add olive oil, and lemon juice to flavor up the peppers, and chill. Other dishes I like to make with grilled peppers are chile rellenos, grilled red pepper butter, and fresh green salad with grilled peppers.

Grilled Red Pepper Butter

1/2 grilled red bell pepper

1 to 2 cloves garlic

1/2 lb. butter

Let your butter soften until it reaches room temperature. Finely dice the garlic and red bell pepper and combine with the softened butter. You can shape the butter into interesting shapes now, or you can simply store in an air tight container, and enjoy on grilled meats, bread, and vegetables, and so much more.

Grilling Ham on the Grill

Pork has been celebrated as a special occasion food for centuries. Coined "the other white meat" pork is as versatile as chicken, and some may say even tastier. A method of cooking pork which is becoming more popular is on the grill. Grilled pork is more convenient than using the frying pans of ovens, and grilled food has an unmistakable smoky flavor that people seem to love. Contrary to popular belief, you don't have to be a grilling pro to pull off great tasting pork recipes. All you need is a little patience to make your next meal spectacular.

I love smoked hams. They come pre-cooked and are already packed full of flavor. I've experimented around with different flavor combinations until I found one that I really loved. Then I decided to move it to the grill. I was astonished by the results. I fire up my gas grill every Christmas Eve and Easter and make this recipe. Pineapple and brown sugar glazed ham with orange Dijon-honey sauce.

You may want to make this recipe when hams go on sale. They can be rather expensive. While we're at the store, we'll want to grab a few items for this. First, get a nice smoked ham; I like the butt portion as opposed to the shank. It's meatier with less fat. Next, grab some pineapple juice, orange juice, Dijon mustard and some honey.

We're going to make the glaze for the ham first. In a medium sauce pan, pour in 2 cups of pineapple juice with ½ cup of brown sugar. Bring these ingredients to a boil and cut the heat back to medium and let it cook down until it's reduced by half. It will start to look thick, almost like syrup. In another pan, we want to make the sauce for the ham to pour over once it's cooked and sliced. Add 2 cups of orange juice and reduce that down just like the pineapple juice. When it's reduced down to ¾ to 1 cup, add 2 tablespoons of Dijon and 2 tablespoons of honey and combine well. Kill the heat and set aside.

There's not much preparation for the ham, just cut one burner of your grill on to medium low heat. We want to place the ham on the opposite side of the grill to cook with an indirect method. Place the ham, flat side down, on the opposite side of the grill, cover very loosely with foil and close the lid. Don't stray too far away from the grill, but you don't have to babysit either. This ham will cook for 2 hours before we begin to glaze.

After the 2 hours, we want to turn the heat up to medium and glaze the ham thoroughly. Using a clean, preferably new and unused paintbrush does a great job. After you glaze the ham, close the lid and return every 15 minutes to glaze again. In another 2 hours of glazing, we will have developed an awesome crust on the ham. Almost like a glossy candy-coat.

Be careful taking the ham off. Make sure to let it rest at least 20 minutes before cutting into it. Leave it sitting flat as it cooked and slicing will be that much easier. Drizzle a bit of the orange Dijon-honey sauce over and enjoy all the wonderful flavors. It's smoky, sweet and savory. It's a huge hit at my place. We have it twice every year, at least.
