When one thinks of rotisserie cooking, you usually envision succulent meats like juicy Cornish hens, mouthwatering baby back ribs, utterly tender pork chops and... I could go on and on, but my mouth is salivating.
However, you can use the Ronco Rotisserie to grill anything including fruits and vegetables. Maybe they aren't as exciting to your taste buds or imagination, but grilling is a great way to add a little something to your side dishes instead of the typical sliced fruit or steamed veggies.
Grill
A rotisserie grilling recipe you could try is grilling fruit using the Ronco Rotisserie kabob rods. Just cut up your favorite fruit into small chunks; strawberries, pineapple, apples, oranges and etc. Thread them onto the kabob rods and brush each fruit loaded kabob with a sugary butter mix. The sugary butter mix would contain the obvious plus, if you like, some cinnamon and lemon or lime juice. You could modify it by using brown sugar or adding a little vanilla extract, whatever your little heart desires. Grill those kabobs for about 10 to 20 minutes, basically until they are wonderfully caramelized. Remove them from the rotisserie and brush with the remaining sugary butter mix. Yummy.
You could do the same with your favorite veggies using the Ronco Rotisserie kabob rods. Instead of the sugary butter mix, marinate the vegetables for a few hours in olive oil, lemon juice, fresh ground pepper and your favorite herbs. Load those kabob rods with the marinated red onions, mushrooms, red/green/yellow bell peppers, zucchini, etc. Possibly spice it up with some fresh chili peppers. Grill those veggie loaded kabobs until they are golden and tender, usually between 15 to 25 minutes.
You can grill tomatoes, potatoes, mango, corn on the cob, etc. Even roast garlic and lemon halves to be used to season meats such as salmon or side dishes such as salads or for deliciously flavored butters like roasted garlic butter. The rotisserie grilling recipes are endless.
